Details  

The beauty of this high end nonstick cookware is not only its good looks but  its versatility. It comes in two surfaces:

The sear surface, not available with other nonstick cookware, has a specially textured surface that allows you to brown and sear evenly. Like Iron Chef Michael Symon says, the pan does all the work (watch the video below).  The slide surface,  is shiny and extra smooth and allows food to release without effort.

The pans are built with thick anodized aluminum, allowing even heat distribution with no hot spots. The handles are riveted and have an ergonomic design. This cookware can be purchased as a set or separately. Obviously, buying a set is a more economically approach and it makes a great starter set and a great gift for a new bride (hint, hint).

What we liked:
  • Foods slide effortlessly from the Slide surface
  • Dishwasher safe
  • Sear surface is adequate for browning. Better than most nonstick

What we didn’t like:

  • Tries to  create the classic ‘fond’ so loved by us foodies but does not really achieve it

    We bought the Unison cookware because of reputation. After using, I notice the lid handles get HOT! Should this happen?

    Also, does the Unison cookware work with an induction stove?

    The handles are designed to stay cool because they have the Y shape however they are made from metal and if the flame is high, the heat may transfer to the end of the handle.
    As far as induction cooktops, the Unison set is made from aluminum, and aluminum is not compatible with those types of burners.
    You can test all your cookware by placing a small magnet on the pan. If it sticks, it can be used with induction cooking.
